Pink hummus

INGREDIENTS

  • 1 can (540 ml) chickpeas, rinsed and drained
  • Juice of 1 lemon
  • ½ cup (125 ml) tahini
  • 1 clove garlic
  • 1 ½ cups cooked beets, cubed
  • 2 tbsp (30 mL) olive oil
  • 1 tsp (5 mL) cumin
  • Salt to taste

STEPS

  1. In a food processor, blend all ingredients until smooth. Add water if necessary.
  2. Garnish with a drizzle of oil and fresh parsley or any other fine herb of your choice. Serve with raw vegetables or crackers.

Can be stored in an airtight container in the refrigerator for about a week.

Kale chips

INGREDIENTS

Chips

  • ½ bunch kale
  • 2 tbsp (30 mL) olive oil
  • 1 pinch of salt

Seasoning

  • 1 tbsp (15 mL) smoked paprika
  • 2 tsp (10 mL) ground coriander
  • 1 tsp (5 mL) garlic powder
  • 1 tsp (5 mL) onion powder
  • 1 tsp (5 mL) oregano

STEPS

  1. Preheat oven to 135°C (275°F). Line two baking sheets with parchment paper.
  2. Wash and dry kale well. Remove leaves from stem and tear into pieces.
  3. Divide among the baking sheets. Add oil. Mix well with your hands and lightly massage the cabbage.
  4. Place both trays in the oven and bake for 25 minutes or until the leaves are crisp. Change the position of the trays halfway through the cooking time.
  5. Add a few pinches of seasoning after removing from the oven. Let cool on the sheets.

Smoothie

INGREDIENTS

  • 1 cup (250 mL) frozen fruits
  • ¾ cup (175 mL) plain Greek yogurt
  • ½ (125 mL) cup water
  • 1 tbsp (15 mL) maple syrup or honey

STEPS

  1. In a blender, add all ingredients and blend until smooth. Add water for a more liquid texture.
  2. Add your favorite fruits, flax seeds or oatmeal as a topping!

Energy balls

INGREDIENTS

  • 3/4 cup (175 mL) pureed dates
  • 1 ½ (375 ml) cups quick cooking oats
  • ½ (125 ml) cup pumpkin seeds
  • ½ (125 ml) cup dried cranberries
  • ⅓ (80 ml) cup skim milk powder
  • 2 tbsp (30 ml) cocoa
  • 2 tbsp (30 ml) ground flaxseed
  • ½ cup (125 ml) dark chocolate chunks

STEPS

  1. Mix all the ingredients in a bowl to obtain a paste.
  2. Using your hands, form the balls.

Can be stored for 1 week in the refrigerator.

Flavored waters

SUGGESTED FLAVORS

  • Strawberry and basil
  • Cucumber, mint and lime
  • Citrus: lemon, orange, grapefruit and lime

STEPS

  1. Slice the fruit of your choice and/or loosen some of the herb leaves of your choice.
  2. Place fruit slices and/or herb leaves in a container or a glass. Add water and ice cubes, if desired.

For a stronger taste, crush the fruits and herbs before adding water and ice!
